Creamy Rice Pudding
1-1/2 cup cooked rice
2 cups milk, divided
1/3 cup sugar
1/4 t salt
1 egg, beaten
2/3 cup raisins
1 T butter
1/2 t vanilla
- Combine rice & 1-1/2 cups milk, sugar & salt in saucepan. Cook on medium heat until creamy, 15-20 minutes.
- Stir in remaining 1/2 cup milk, egg & raisins. Cook another 2 minutes, stirring constantly.
- Remove from heat & stir in butter & vanilla.
- Serve warm.
