Cube Steaked!

DH went down to Ferguson's Meat Market yesterday and picked up the #4 economy freezer pack; what a haul! $149.95 bought 50 pounds of meat:

10 lbs extra lean ground round
10 lbs boneless chicken breasts
10 lbs country style pork ribs
20 lbs beef combo, which we took as:
12 lbs boneless chuck roast
6 lbs lean cube steak
2 lbs lean stew beef

*you need to call ahead to order the freezer packs and schedule a pickup time. Their helpful staff even carries the big box-o-meat to your car for you.

We cooked up some cube steaks last night to appease my curiosity (because I was raised by a vegetarian up north where CS was never on the menu :) and he said they were the tenderest he'd ever had.
He dredged them in flour, then browned in a skillet with butter, and removed to a plate. We added the flour to the pan drippings, then gradually added 1 can beef stock to make a gravy, seasoned with salt and pepper, then returned the meat to the pan and simmered covered while we made mashed potatoes and salad.
While it was not the most exciting meal ever, this was definitely comfort food and we'll make it again. We think it would be better with twice the gravy, but only had one can of stock on hand last night.
