Lemon Tarragon Chicken Salad

i made this last night with 1-1/2 leftover grilled chicken breasts ... very good as a salad plate or sandwich filling ... just noticed Russ picked all the peas out of his! lol

Lemon Tarragon Chicken Salad
1/2 cup mayo
2 Tbsp sour cream
1 Tbsp lemon juice
1 tsp lemon pepper
1 tsp dried tarragon
1 Tbsp fresh parsley, chopped (or 1 tspn dried parsley)
1 cup frozen peas
1/2 cup finely diced sweet onion (Vidalia or red)
1/2 cup shredded lettuce
1/2 cup sliced almonds, toasted*
  1. Combine mayonnaise, sour cream, lemon juice, lemon pepper, tarragon & parsley in large bowl.
  2. Add chicken, peas, onion, lettuce & almonds; still until evenly coated.  Refrigerate until serving.
*to toast almonds, saute in 1 tsp butter on medium high heat, stirring often, until they start to brown & become fragrant; be careful not to burn them, as they will continue to cook even after you have taken them off the heat
